White Beans & Sun-dried Tomatoes

I FINALLY found one of my healthier recipes (snagged from About.com). I made this in the winter, using some dried tomatoes from SIL's sisters garden,instead of store-bought in oil, substituting a bit of EVVO for the oil in them.

Prep Time: 15 minutes

Cook Time: 5 hours, 30 minutes

Ingredients:

  • 2 cups Great Northern beans, sorted
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 3 cups vegetable broth
  • 3 cups water
  • 1 teaspoon salt
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon Herbs de Provence (I didn't know what this was, so I simply used Italian seasoning)
  • 3/4 cup chopped sun dried tomatoes in oil, drained
  • 4 ounce can sliced black olives, drained
  • 1 cup shredded Havarti cheese
  • 1/2 cup grated Parmesan cheese
Preparation:

Mix all ingredients except tomatoes, olives, and cheeses in 3-4 quart slow cooker. Cover slow cooker and cook on high for 4-6 hours or until beans are tender. Mash some of the white beans while in the crockpot to thicken mixture. Stir in tomatoes and olives and cook 10 more minutes until thoroughly heated. Stir in both types of cheese and serve. 5 servings

This was VERY tasty, and also no meat, so the vegetarians should like it, as well!

Here is a great recipe that even my kiddos love.

Shrimp Creole

2 lbs uncooked med. shrimp (thawed if frozen)
1/4 cup of butter
3 med. onions ( chopped fine)
2 med green peppers (chopped fine)
2 stalks celery ( chopped fine)
2 cloves of garlic (chopped fine)
1 cup water
2 teaspoons fresh parsley

1 1/2 teaspoon salt
1/4 teaspoon red pepper (cayenne)
2 dried bay leaves
1 large can of tomato sauce
6 cups cooked rice

In sauce pan melt butter over medium heat . Cook onions,peppers, celery, garlic for about 10 min.

Stir in remaining ingredients - (EXCEPT RICE AND SHRIMP)

Simmer for 10 min.

Stir in Shrimp , stirring until pink and firm.

Remove Bay leaves.

Serve over cooked rice.

So good ......

This was made from chickin's Trinity, with a few MINOR adjustments (I made the Trinity in my crockpot)

One portion Trinity
1 pkg. Louisiana brand Jambalaya w/rice
1/3 package ground spicy sausage (brand of your choice)
1 small package Southwest Grilled Chicken Strips(it's pre-cooked)
1 small can fire-smoked green chiles
1 small can black beans
1 small ear of white corn, knifed off the cob





Cook ground sausage in crock.
When 1/2 done, add Trinity ingredients.

Let Trinity and sausage slow cook @low for one hour, stirring occasionally.

Add all other ingredients, including water from the instructions of the Jambalaya Rice mix.

Let slow-cook for 1 hour on high, 3 hours on low.



From this point, ENJOY!!

Shrimp Tacos- Funny

There is a such thing as fish tacos. Apparently they are really good and good for you. Don't know never tried them.
