I just throw a steel tarp over it/them. I bungee the outside corners then work my way down each side of the trailer. I like to throw straps over the coil in addition to the chains, so I'll throw those over the tarp. Each end of the tarp, I'll take a piece of wood dunnage with a two inch strap and ratchet, and use that to hold the tarp ends down.

Well It all depends on what you have for tarps. One coil or multiples.

For the most part, it really is like tarping just about anything else.

About the only thing that I can add is, if your using a full length steel or lumber tarp, pick front or back for the extra length you will have.

We use full length tarps. When tarpping a coil, I'll add about 4 feet to the front, roll it with a 4x8 and strap it down. On the rear, I'll fold it all the way to the coil then strap it down. Bungy the the sides and off I go.

We have 4 foot drop for coils, never really had a problem with one coil but I have three this trip and I guess I don't understand what needs to be different, doesn't help matters two of them are not rolled evenly leaving a sharp edge. Already ribboned two of my tarps, including one lumber.

I'm not sure why you think it has to be different. I'm guessing you have 3 little ones loaded suicide. You can tarp them just as you'd tarp a single suicide. You'll just have 3 small camel humps instead of one big hump.

As far as sharp edges go, you need furniture pads or some carpet. You might be able to get away with duct-taping folded towels or something in a pinch, depending on how sharp the edges are.
