Does your engine fan come on at all? I drove one truck where it ran hot all the time the shop did not believe me said it normal, They ended up putting a manual fan switch on it after it blew the engine on another driver after it already had on me once also. That is one of the reason I dislike Detroits, they love to run hotter than others what I have seen.

Gotta do your pretrips and check levels. If my truck hits 200 I pull over, give the truck a brake, and check coolant levels again.

With your supposedly 12 years as an HVAC tech you must have some MECHANICAL skills , things need to be looked at and in this weather things do OVERHEAT , when you get a chance check your rad , your rad is the same as the condensor on a A/C system it needs to be CLEAN for proper airflow across it.

Most Freightliners when water level is low it shuts the truck off and won't run.....soon as I hit 200 my fan cluth comes on and up there it stays on and is hard to shut off engine temp has to drop below 170
