Yes I've just bought a '15 Cascadia Evo and after much thought, I'm gonna get my bro in law whose handy with carpentry to make me a shelf that will be installed over the pass seat. Run it along that ledge and screw it down, against the cabinet. Will make it neat and give me room for the oven. Probably enclose it in wood. I've taken the pass seat out so it gives me more room.
Right now, it's on a plywood base on the top bunk. Works good but it's strapped down for now.

So, it sound like my only option is a hand saw, or straps. I can't believe Freightliner designed it this way. I drove an 08 Columbia that had a microwave provision.

My flat screen is strapped to that now. I can't believe Freightliner provides provisions for a tube TV in 2015. They don't even sell tubes anymore. I had an 08 Columbia that had a spot for a microwave. I'd love to get in front of the engineers as say "what gives"?

This is why it is best to spec the truck the exact way you want it and order it made to your needs. You can get the sleeper set up a hundred different ways. All it takes is specing it to meet your needs.

Go to home depot or lowes and buy a shelve with brakets and screw it in somewhere or forget the microwave and use your exhaust pipe instead
