Do you have to double clutch on ALL commercial trucks, or are their any that are like regular stick shift cars?

You have to double clutch on all big trucks when you take your CDL test and while in school. Your trainer might even require it at first, but he should teach you how to float (not using the clutch at all).

Not necessarily. There are straight trucks where I work that require a class B license to drive. Those have synchronized 6 speeds that drive like a car or p/u truck.
