I thought shipping a car would be fairly simple, but there seem to be a thousand websites and options. Most of these websites seem like middle men looking to take their cut or scams of one sort or another. Any recommendations for a reliable car shipping company / process? Thanks.

Most of the household movers will ship a car. Just make sure to use a reputable one.

I used to work at a tow shop and we were a " hub " for DAS dependable auto shippers , they probably move more privately owned cars than anyone , its cheaper if you use a drop off and pick up method vs door to door , probably run just guessing for that distance 1200 or so not bad considering would probably cost 6 or 700 just for gas if you drove it , not to mention wear and tear ect , good luck ,

That's because there are a ton of middlemen and brokers. I've used https://www.a1autotransport.com/ a few times over the years and have no complaints. You may find it helpful to seek out companies that have an office in your area-that's what led me to them. It's a lot easier for communication in my experience.
