I'm all for that! I love to cook (and I love to eat)!!

I can't go by a bookstore or a kitchen store without buying a cookbook, even though I end up only using one or two recipes from it over the long haul.

Thank God for the internet! You can find almost any kind of recipe on it without buying a book.

And I love recipe exchanges.

Let's start with...

INGREDIENTS
4 pounds beef chuck roast
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 ounces butter
4 green onions, sliced (white parts only)
4 tablespoons all-purpose flour
1 (10.5 ounce) can condensed beef broth
1 teaspoon prepared mustard (Preferably brown mustard.)
1 (6 ounce) can sliced mushrooms, drained
1/3 cup sour cream
1 tablespoon finely minced garlic or garlic paste
salt to taste
ground black pepper to taste

DIRECTIONS
  1. Remove any fat from the roast and cut into strips. Season with 1/2 teaspoon of both salt and pepper.
  2. In a large skillet over medium heat, melt the butter and brown the beef strips quickly, then push the beef strips off to one side. Add the onions and garlic and cook slowly for about 5 minutes, then push to the side with the beef strips.
  3. Stir the flour into the juices on the empty side of the pan. Pour in beef broth and bring to a boil, stirring constantly. (Do not allow it to form "lumps") Lower the heat and stir in mustard. Cover and simmer for 1 hour or until the meat is tender.
  4. Five minutes before serving, stir in the mushrooms, and sour cream. Heat briefly then salt and pepper to taste.
Serve over noodles or rice. Serves 8.

Sometimes, just to do something different, I will add a little chipotle past when I am working with the garlic and onions. It gives it a great "flair". Just don't use too much. A teaspoonful is more than adequate for most people!

Pork Chili Verde

5 3/4 pounds lean diced pork
3/4 (28-ounce) or 1 (21-ounce) can green enchilada sauce
1/3 bunch fresh cilantro, leaves chopped
1/3 large onion, chopped
1/3 bunch green onions, chopped
1 fresh jalapeno, seeded and chopped
1 1/2 ounces canned green diced chiles
Garlic powder, to taste
Freshly ground black pepper


Simmer diced pork in large pot of water until tender. Drain pork and return to pot.
Add remaining ingredients and simmer until heated thoroughly.

My dh is crazy about Boston Cream Pie.

So I got a real simple way of making one that makes him real happy.

I just take a yellow cake mix and pour the batter into, two 8 inch round cake pans.
I only fill them up so much as I want the layers to be relatively smaller in width then usual.

After they are done baking, let them set for a spell to cool. After room temp cooling, I remove one and set it on a cookie sheet and by this time, I have mixed up my instant Vanilla pudding to place in between the layers.

Just spread the Vanilla pudding on the cake layer and place the other layer on top.

I take the chocolate frosting and remove it from it's container and place it in a microwave bowl.

ONLY microwave it for about 50 to 75 seconds, as this makes it softer to work with and will come out more as a glaze.

Spread the frosting over the top of the cake layer and let it drip down the sides of the cake.

Between my dh and nephew, this cake does not last long......

Fast and simple?
From my mother in law:

1 lb ground beef
small chopped onion
1 small can of tomato sauce
1 cup of water
2 cups of rice
powdered garlic and chili powder to taste

Brown meat with chopped onion
drain
pour in can of tomato sauce and flavor with garlic and chili powders (I use about tablespoon of each) and cup of water.

Bring to boil then let simmer.
I use instant rice and fix according to instructions.

Put serving of rice on plate and then cover with meat and sauce.
Enjoy with crackers or bread!

Fast & tasty broccoli casserole

2 small pkgs of chopped broccoli (or 1 large)
1 small can of canned milk
1 package of shredded cheese (sharp taste best to me)
2 cans of French's fried onions

Preheat oven to 350 degrees

Mix all ingredients except canned millk and put into pan
pour can milk over and put into oven

Every 20 minutes stir until all milk is gone and cheese is melted through

Serve

(can steam broccoli before putting into pan to cook faster)
