thank you , that makes me feel better. i know the food and drinks are just so good. i love to go to vegas and i make sure i enjoy my time there. now its payback time !!

My downfall is always when we go home, or to my daughters house.
I love to cook, and am a REALLY good cook, (everyone tells me so..)
BUT, the things I love to cook/bake/chop/dice/slice/batter/grill, are almost ALL, high-calorie, high-fat, totally BAD for me!! LOL

ESPECIALLY desserts! Caramel Flan, New York Cheesecake, Tiramisu....*drool8 *drool*

I make them, because family/friends clamor for them, but lately, my enjoyment comes MOSTLY from THEIR enjoyment, and in the pleasure I find in cooking for them!

I'm sorry.
Here is something to make it up to you!
Good FOR me, and also, just plain GOOD!!

Tasty Vegetable Fajitas

  • 8 (8 inch) flour tortillas
  • 2 tablespoons vegetable oil
  • 1 red onion, thinly sliced
  • 1 green bell pepper, seeded and sliced into strips
  • 1 red bell pepper, seeded and sliced into strips
  • 1 teaspoon minced garlic
  • 1 yellow squash, halved and sliced into strips
  • 1/2 cup salsa
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro

DIRECTIONS

  1. Wrap tortillas in aluminum foil, and place in oven. Turn heat to 350 degrees F (175 degrees C). Bake for 15 minutes, or until thoroughly heated.
  2. In a 10 inch skillet, heat oil over medium high heat. Add onions, red and green peppers, and garlic; stir to coat with oil. Cover, reduce heat to medium, and cook for 5 minutes. Stir squash into vegetables. Stir in salsa, cumin, and salt. Cover, and cook for 5 minutes.
  3. Spoon vegetable mixture evenly down the centers of warm tortillas, and sprinkle with cheese and cilantro. Roll up tortillas, and serve.

There are also flavored tortillas that can be used. Spinach, sun-dried tomato, etc.

Carbs! That's what I love the most! But I do know lowering them (especially since I have such a sedentary job as a secretary) could do wonders.

I agree that is progress because slowly steadily gaining is a toughie. Also been my prob, since being comfortable with the bf I've been gaining myself. I'm glad he doesn't seem to notice but my clothes are noticing!
And walking must be improving your health. after all your heart is a muscle like anything else. Keep up the good work!

What happens in Vegas stays in Vegas right? And I think if you've already got a diet rolling and then you fall off, you don't do as much damage as you might have if you never had a diet in place to begin with. How could anyone resist in Vegas.

I'm going to make those fajitas tonight! They sound delicious!
Well today is day 3 - somehow I lost a pound even though my dieting efforts were practically nill. Could just be normal fluctuation but I like to see a step in the right direction.
And tonight I'm am finally going to get to the supermarket. Sad to say but I think I'll get my exercise off the ground once the bf leaves. Next week if he passes the test TOMORROW. He so nervous the poor guy didn't sleep at all last night.
And while he was studying until the morning, half a box of rice krispies cereal is gone. Poor guy! I really do hope he makes it on the first try....
Breakfast: leftover plaintains, I looked them up and they weren't as bad as I thought calorie wise. I thought I ate 400 cals worth if that stuff but it was only like 230 cals. And 2 cups of water down. And I had some 'veggie chips' as a snack, because 230 cals is a pretty small breakfast and by 10am I was hungry again!
Lunch: I found some Indian lentil soup in the back of a cabinet and had a cup of milk and some tortilla chips. This day isn't shaping up too bad.

I haven't gotten on the wagon yet. I met a group of friends in Canada for a long weekend and got home on Tuesday. Until I get to the market, there's not much fresh food in the house... and fresh fruit and vegetables are a must for me to succeed. So rather than start knowing that I'm set up to fail, I'm just going to wait 'til Sunday.

The most difficult part for me will be exercise. I can't afford a gym, I'm not supposed to walk more than necessary due to a "frozen" hip (that eventually will be replaced), and I work long hours in an office job. I think I can manage the food, though... so my progress will most likely be slow but steady. We'll see.
