Then of course you have the Jackalope. This species, native to southeastern Colorado is a cross between the large male jack rabbit, and the plains antelope. They are quite tasty, but bashful and hard to find.

Oh yeah, the horns are used by Native Americans in many of their curing ceremonies, and as an aphrodisiac.

Of course PETA is trying to get them put on the endangered species list, but so far has not been successful.
