Stainless steel most likely will just round out when using an easy out, and most probably will not free up. Instead, the insert will just spin. Quickest and easiest is to do as advised above. Take the visor off, breaking whatever bolts happen to break doing so, grind and punch them out and replace. You will spend way more time trying to do it the expected easy way than to do it the right way. You have already spent as much time taking the headliner loose as it would have taken to get the visor off.

Trying to install a drop visor on my 07 peterbilt..went to take out the side cab bolts on the driver side. Back bolt broke after maybe 3-4 turns and the front bolt just spins in the nut sert...buttoned up my visor and cursed like a trucker...wtf now. Didn't even attempt the passenger side

Make sure you, or future readers put a mechanics magnet on the inside side of nutsert. Then you can keep it from falling down into the door brace. A helper is good as the hammer may knock the magnet off.

If your serious about visor. You may get a vice grip needle nose style from the inside. Over the end. Also every part in this area has an access hole to install it from the factory. So if you want it bad enough. You can get to it.
Might be possible to grind the bolt and then stud and outer nut-sert to get it out and reinstall new nut-serts -
I have experience with this scenario.
If you going to fix it, take the visor off all the way. Have a friend so paint stays painted. That stainless is like a six foot razorblade.
Break whatever is gonna twist off and then use a punch to drive the remaining piece into the center. Then if the nut-sert doesn't spin you can take it out with a 1/2" or 7/16" drill bit. Eye ball it so you only hitting the inner lip. Remove the nutserts and start over.
