Cabinet mounting fridge plate mounting

Hello. New Guy Here.

Trying to figure out the cabinet mounting screws and the screws holding down the plate the fridge sits on.

Most of the screws only came loose to a point then stopped.

How does one remove these? Are these screws into threaded aluminum or something? I am trying to change the interior some on the 2000 4900 I start driving this week

Can someone tell me or point me to a cross section of how the floors, walls and ceilings are constructed? Are there support members in a uniform fashion, or is it just where the original equipment is mounted?
