Eating Healthy on the road

    Thank You guys for your input, this helps a lot. The don't not eat list is in my top 10 of favorite foods, perhaps why I have a problem.
    At the iron skillet I usually start my meal off with a "Close encounter of the third kind" size of mash potatoes.
    Those that haven't seen the movie it's a mountain of mash potato

    You can also substitute the pepper shaker for a salt shaker, and hot sauce or Tabasco for a lot of sauces that do nothing but add fat or calories. After awhile seems normal to use them for everything.

    Richard Dreyfuss talking to the mashed potatoes " It means something" .....LMAO! Any-who if you wanna stay of the meds Potatoes and Rice gotta go. They are the number one offenders on the glycemic chart. I'm sorry to say this and I don't mean to be a jerk but all the posts regarding salt and fat that are coming from folks are miss informed on what affects your blood sugar levels. I'm saying that you shouldn't watch your salt intake also but that isn't your main problem. Carbohydrates are strait up what effects your blood sugar levels and get you classified diabetic and earn you a every year trip to the DOT doctor. If you can dial your carb intake down to 20 net carbs a day your, walk 20 minutes a day and drink just water and lots of it your blood sugar levels and weight will drop without meds. I know I'm doing it and that was what my Dr prescribed to get me off the meds before my next DOT physical. Seriously look into atkins it's a guy diet if there ever was one. Meet and veggies.....OH AND BACON!!!

    Thank You elk You have been a huge help, and what you are saying lines up with what the doctor told me. One thing he didn't tell me is what foods work well on the road, I have a good supplier for beef jerky, but that alone doesn't fill me up and at $16.00 per pound I might as well just sign my check over to them lol. Thanks again your advice is helpful and I'm going to put it to use.

    Adkins works well- but it is hard to stay on for a lot of people. If you can't stay on it for life you will normally gain back your lost weight and then some. Everyone is different. Find out what works for you and toy with it. Adkins allows a lot more than 20 grams of good carbs a day after your initial weight loss. If someone loves fruit and lots of colored veggies it is not for you. Weight Watchers can be good if you use your points or what ever they are doing these days wisely. Knew a lot of women who would use all their daily points on a piece of cheesecake or ice cream. They are still a bunch of chug butts. I would get small to medium Yukon Gold or other tater, steam cauliflower, broccoli, okra, greens, squash, ear of corn, etc. and load up on that with 3-6 oz of chicken or real lean beef. I could eat until stuffed if I wanted and still lose weight. That works best for me. Others would hate it. Main thing is not to get discouraged and keep working until you find what works for you. If it took you 1-10 yrs to get out of shape don't expect to get back in a couple of weeks. That's TV hype for suckers. Carbs need to be watched for sure. There are good and bad carbs just like good and not so good protein.

    I feel you on what will travel well. I have a dehydrator and food saver so I'm going to toy with making my own low carb jerky and then making small packages of jerky for the road. You can also eat pork rinds they have zero carbs. If you have a desire for salty crunchy. Almonds and most nuts are pretty low on the carb count. I apologize if I'm over the top with the advice but I had no clue I even had a problem until I went in for my DOT physical before I started trucking school. I just hate to see anyone else on meds that dose not have to be. I'm one of those guys that tends to research the S#&& out of stuff. Best of luck on this.

    So true! But in our situation carbs are pretty much just bad due to something internally is not regulating them well enough. The rest of what you say is very dead on. The only thing I miss is fruit. Nice food stamp...it made me laugh.

    The perils of the "western diet" are at hand and this poor soul has landed him in hot water because of the dreaded "D" word. Type 2 Diabetes is self induced, no doubt, as opposed to the type 1 variety/
    Your pancreas can't handle the sugar your stuffing your body with or your production of insulin has taken a dive. Either way your in deep do-do.
    Can you imagine that in some parts of the world there are societies of groups of people that haven't even heard of the word "diabetes"
    That's because they don't eat the "goo" like some of us eat, so that particular disease is non existent, but if you read the main stream media they make it sound like its a global thing.
    Not so. We have to take care of our bodies, our health and take responsibility. No more excuses or ignorance of the facts. Theres only one way and thats a change of lifestyle/diet.
    We as Americans eat Waaaaaaay too much sugar. Its disgusting really. You have got to wake up and smell the coffee, without sugar of course.
    No point relying on drugs or some miracle cure, cos there isn't one.
    You got to go back to basics and start to read up on what causes Diabetes. A strict low-carb diet is the solution but you don't target specific foods. All of them should come under the sugar/carb label. But I can tell you, it's not going to be easy
    In fact it's downright difficult to stick to such a diet/lifestyle. As adults we are addicted to sweet things, and it's costing us our health. We are a nation of fatties, and our healthcare costs are through the roof!! No point blaming Obamacare on that one!
    Type 2 diabetes is at epidemic levels in this country and I'm astounded how many of us succumb to it. You can round up the usual suspects or blame it on this or that, making all the excuses known to man, but really.
    Diabetes can kill you, and its time to do something about it. Its what you put in your mouth that is the culprit.
    You just have to find a way to change course and rid yourself of this insidious disease. There's plenty of info out there, so go for it.
