The FDA/USDA are the food producers counterpart to the FMCSA. I just want to add in to this thread an incident that happened recently concerning the manufacture of certain cheeses that get aged on wooden boards. Earlier this spring, they decided to ban the aging of cheese on wooden boards for food safety reasons that had no scientific backing (sound familiar?) This would affect a vast majority of specialty cheeses and cost millions for the aging racks to be replaced. There was a UNITED UPROAR from the industry. The government backed off. All the way off. This is not familiar to those in the transportation industry. Government never seem to back off. Maybe it's because our voice is not loud enough, not focused enough, too many voices, too divided, little versus big. I just think it's important for everyone to support OOIDA in this matter as well as call your reps in office as they ponder new laws and the highway bill. They've made it really hard, don't let them make it impossible!

Yep the entire world ages their cheese on wood, but here we are really concern about the bacteria that is used to make the cheese spreading onto the boards and causing other cheese to get it.
