So if you drove 3 hours after the first 8 hr break, you'll have 7/11 and 11/14 hours remaining.

The elogs will automatically calculate it for you. But yes you can do 8/2 or 2/8 or even 8/8. The best thing I found is to use a logging app to input my lines from paper logs and it shows a blue line (legal to drive) and red line when time runs out. I can even put in the sleeper line into the future to see what tomorrow is gonna look like when the red line starts. Then I might show a half hour break and 15 minute fuel to see what that does to the red line too.
