I've got 98 vn64t detroit s60 when I drive it temp arrow drops down to 160 and than jumps up to 230 and engine starts to cut off for a second or two. Than it goes back to normal 190. Is it temp sensor? Cluster instrument? or something else? Thanks

I would check Coolant Temperature Sensor first.
