    Think of a sous chef as an nco in charge. In a full kitchen there is the Head Chef, who is in charge of the menu and everything else.

    Then, if the kitchen is big enough, there are the Executive Chefs who oversee a department, rin thenkitchen in the absence of the chef, or have other delegated duties.

    Below them are the sous chefs who run a station and oversee the line cooks on that station.

    Then there are line cooks.

    Below them prep cooks.

    The house is finished. Sheila said it looks wonderful.

    I sent dude the rest of his money, since I'm not going to be home for awhile. This was a lot more complicated than you might expect, because I've run out of road stamps and envelopes ( serious rookie move ).

    BUT

    Fortunately we are on a 34 and need some exercise.

    Post Office 1.75 miles each way.

    SO

    Bought 3 of those forever envelopes with the postage on them, used one to send dude's check.

    If a sous chef makes it, it's going to cost $59.
