So since nobody has mentioned a few of the drivers at my company recommended this new fandangled microwave air fryer convection oven doo dad all in one. Im gonna tell you right now I love the thing it works great its a Galanz 900w microwave. Heat seems to not be a problem in the cabinet and it cooks really well.

Loved my little electric toaster oven when I was otr. Cooked everything from steaks to pizza to fries in it. I put it where the microwave went and would have chosen it over a microwave any day. However, I still wanted my microwave so I built a shelf out of 2x4's over the end of my bed with legs tall enough that my feet fit under it comfortably and strapped my microwave to it. It blocked the tv mount but I didn't have one of those anyway so no worries there.

Walmart has cheap wood or plastic silicon cutting boards I used as heat shields. Just check all 4 sides around your device and dont forget to check the temp above your device while it is hot. The inside of a truck will burn like a paper bag if something ignites.

Somewhere I have a picture of one of my first trucks with a melted closet/desk thanks to a toaster oven. It didn’t get hot enough to start a fire but it was hot enough to melt and warp the panel and door.

I've got a couple of rules on appliances like this for the truck. First, you've got to look at amp draw and make sure your inverter can handle it. I've got a 2500 pure sine wave with 4 strong batteries and a Keurig still taxes the system, and it only runs for a couple minutes at a time. I always idle the truck when cooking with an AC appliance.
You've got to remember that inverters, even with big cable, really heat up the wiring. Make SURE your wiring is done properly, fuses and breakers and terminals need to be high quality or you're gonna smoke something. Just a little corrosion or a bad connection and that makes more heat and will melt 1/0 wiring in a hurry. Ask me how I know!
Next thing for me is to balance cheap priced appliances I can replace at Walmart while on the road with good enough quality that they won't be power hogs or burn down the truck. If you don't read the amp draw on the bottoms of the appliances you buy you should if you want to cook in the truck. It's almost never printed on the boxes anymore. I've unboxed plenty of crap in the aisle at Walmart. Next thing is sometimes they lie, especially on the really cheap Walmart crap.
I use a $19 Walmart toaster oven. It gets REALLY hot but I love me some cheese toast or garlic bread now and then. Plus all sorts of frozen breakfast stuff is best in the toaster oven. Build an enclosure with no sides or back touching the interior, 1-2" space at least.tscottme Thanks this. -
