A company certainly can keep track of every minor infraction. But it's in their interest to not look unless you have a major event. Micromanaging really kills employee morale and causes high turnover, so you don't see it much in big companies. Mostly the smaller ones.

If a company won't let you take a drink of water while you're working, I suspect that may be a violation of labor laws.

I guarantee, if my company put a driver facing camera in my truck...nobody would say a word about what I was doing because they would be too horrified to review it...because you put that in my truck...I'll drive naked until it's removed.

Just don't drive for a company that has driver facing cameras and you won't have to worry about it

Most companies will only monitor the driver facing cam when a critical event is triggered

I have had one for a few months now. There are a few things that makes it record.
Looking away from the windshield for too long, following too close, not fully stopping at stop sign or light, holding your phone and not wearing a seat belt.
At my company we have already signed a document saying we won't talk on a phone even with a headset so that will trigger it for my company.
I have mounted a phone holder to my windshield that comes out to the steering wheel. I can touch the phone screen, I can change the volume, channel on the radio and play cds. I can even hold the mic on a cb.
It will record if you are looking down too long to grab a drink or snack. I'm know what I can't do so I don't, but I'm not a robot and I'm going to look down too long or do something to set it off, that's their tough luck, I'm doing what I do -

Well (looks around to see if anyone is eavesdropping), I broke serious wind just as I got up around his door and it set off his camera.
He begged me on the CB to take the blame, but I wouldn’t! I told him to blame his dog!
