Most likely went to cold storage right away to be mixed amongst other loads of meat to avoid detection then trailer gets dumped somewhere

When someone’s gonna steal over a quarter million dollars worth of beef in one swipe, they’ve already got a buyer lined up for it. They’re not gonna sit on it in some cold storage or cart the thing around the country. They hook the trailer and go from point a to point B. My guess is they get $25-$35K for a hook and drop load.

Well, it'd certainly make for one heckuva BBQ, lol... I used to haul those IBP loads, some of 'em were worth more than what was listed. Here's another thought: maybe the thieves were preppers looking to make jerky out of that meat, lol.
