I like the landing gear down. Great suggestion.
The rocking of the cab can be deceiving. Its on air bags to the frame plus the suspension air bags, so it can lean a long way before there is any danger of going over.
As far as trying to drive... sadly more dangerous than sitting. Much more apt to blow over moving.

I'm sitting in the summit ret area in Wyoming on I-80 westbound right before Laramie. I am almost fully loaded and stuck in wind gusts up to 80. I am a new driver and my truck is rocking like crazy in the wind. It's really scaring me. There is literally no where for me to go. What are the chances it will blow me over. This really sucks. I'm freaking out.

If you have 44k on I don’t think you have to worry about blowing over, but I’m not in your situation. Like what’s already been said, if it’ll make you feel better it doesn’t take that long to crank them down.
