When I use to own my own truck, I used the cheap-o dial type microwave and a 1000 watt inverter. Worked fine for years. The trick is getting big enough cables to supply. I used 1/0 (one-ought) cable. The company I am currently working for (company driver) has most of their newer trucks pre-wired with a factory 1200-watt International (full sine-wave) inverters. Some of the older trucks don't have those, but they will install up to a 1500-watt unit (supplied by the driver)...they request a minimum of 2-gauge wire. They also supply the big battery box breaker in case anything shorts out. Those are a must unless you have good vehicle insurance.
