Been a while but maybe the Waverly Truck Stop at exit 157? And it seems like there is another possible place within a few exits of this one, south side of interstate that I've never been in.

Exit 124 on the east side of Monroe has Mel’s kitchen at the truck stop. They claim to be a Cajun kitchen, never ate there though

On I10 there's Frog City in Rayne, exit 87. Ant The In-Laws in Iowa, next to Pilot, exit 43. Both accessible to 18-wheelers.

I live in West Monroe, La & though I have not been to Mel's place at the 124, I dont think he has gumbo/ jambalaya. Mel started a fried chicken place back in the late 70's or early 80's & always had the best. He has now expanded his menu a bit to some basic Cajun style meals but its mainly chicken, pork chops etc. I dont think its what you're looking for, but he does have very good food. Its some of the best around, so I other than gumbo/ jambalaya, I'd suggest stopping by. I think you'll enjoy it. It is at a truck stop, so your good there.
Otherwise, I cant think of any place nearby on I-20 easy on/off with truck parking that has what you're looking for. There are places around but you aint gonn get to them in a big truck. Sorry I cant be of more help. Good luck.againstthewind and Just passing by Thank this. -
