I wonder if all the examiners at that location allow drivers to choose shifting method? Or if all the examiners in Utah allow drivers choice for shifting?
It would be interesting to hear from other drivers that have tested in Utah.
I am assuming you went to a state dot office to do your driving test. Which location was it? Others that have gone there can chime in.
I understand your confusion when your instructors were telling you that you didnt need to double clutch. Some employers will require drivers to double clutch for their test drive.

That may explain it. There is a 3rd party testing company here in PA that was doing testing for a #school in s.e. PA, and the state found their testing standards lacking, and is requiring students to be retested by the state in order to retain their cdl. They are going back a couple of years.
