Couple questions, I had a 2000 pete 379 with a 63” sleeper. I’m tossing around the idea of being able to drop my hay trailers and hook up to the camp trailer with it. I have a non sliding 5th centered in my tandems and get perfect weight on the steers, any ideas if there’s to much rear overhang for a camper with it.

Likely it will not fit. The kingpin is the same size so no worry there. The issue is clearanc in turns. If you can remove the bobtail mudflaps, and run in states where that's legal, you might be ok.
You can also get what's called a pin box extender. That moves the kingpin up for more clearance, but they aren't cheap. -

Do some measurements, I used to pull mine, but don't think I could have without sliding my fifth wheel back., for your lights to work right you will have to tie in to the tractor tail lights, you can not go off of the trailer plug, just in case you didn't know.
