Jump rope (empty trailer )room on back of it need about 10 feet of space. Run in place. Burpees, do as many all day anytime anywhere.
If you are the exhibitionist type jog or run around truck stop. Not me , may get hit.
Dips. Bunk edge.
Push ups always, anywhere.
Shower room , jumping jacks, core work.
Do these all week if you are OTR. The industry bets on you taking the bait of fast food available anywhere, and clocking out early cardiac style. Don't do it. Subway is ok just beware of extra meat and cheese unless you can burn it.
Garlic pills. CLA. Those supplements that can help.

Flatbed yep! Remember tying down chaining could was a workout in itself. If you dryvan don't forget to put your weights away. Once I hit the brakes in city trekkin and the discs flew against the back of my seat and made a scary sound.
And also, never leave them outside the truck or tie them down behind the tractor or with your load. Insurance , movement, too much to worry about. -

I open my passenger door, face towards the windshield, grab hold of the handle near the dash and the handle near/on the door and do step ups. Best leg exercise I have ever done. 3 sets of 10 each leg is enough for me, but if someone needs resistance they can slip a dumbbell in a backpack and put it on.
I got this Mainstays canister at Walmart and put a 30 foot drag chain in it and use it for presses or sometimes just walk around the rig with it doing intermittent lunges.
I also bought a trailer airline spring and attach it to a handle like this and a black load securement strap with the S hooks on each end and find a place to hang it and do tricep pull downs. Safety glasses recommended.
