So for a few months now when I go to fill up the def and break the seal with the pump handle it starts to suck in air like it’s under vacuum. The tank is starting to cave in as well. Does anyone know what would cause that?

I had the same issue some months ago. It's a valve inside the tank that's not letting air in as fluid level goes down. You will need to have it replaced. I don't quite remember all details but KW west Atlanta replaced it in just a few hours.

Seen a MACK with a massive aluminum DEF tank the other day. 30 gallons? 50?

Likely plastic coated on the inside.

Tank vent plugged or not working right. Usually on top, may have to take off a cover to get at it. Not expensive.

Yep, vent is plugged. The vent hole is located in the head unit, where the coolant and def lines connect. There will be vent line coming out and just draped down the back of most tanks. Take the line right off and look into the nipple at the head unit itself. This is where most of the blockage is. It will be just dried crusty DEF fluid. Chip it out with a screw driver or coat hanger.
