I eat well, but tend to gravitate to freh fruits, veggies, sandwiches, and frozen foods. The quality and ingredients in some frozen foods are improving at the margins. There are some small niche outfits starting to get mainstream distribution that don't have the chemicals found in much of our food. I particularly like the Tamales that ive been finding lately. One group is out of Texas and it comes in a cloth bag a dozen for 7.99 and they have beef pork or chicken. All typical ingredients like if you made them yourself.

I use the Galanz 7 way micro oven. It is a microwave/air fryer/roaster/convection oven/oven etc. Retails about $110, fits in the microwave space but offers much more versatility.

I don't do as much full on cooking as others and stick to paper plates. I don't like doing dishes. The oven I talk about above has some pans and I cover them with aluminum foil which I then toss so I don't have to wash them.

Edit: Failed to state that my 19 FL has oem refrigerator and 1800 inverter.

I have a truck with a 1800 watt inverter and no fridge. I have an decent sized electrostatic cooler I basically use as a fridge and a 54 qt. freezer chest (I bought it after Covid started changing things to be able to avoid trips into truck stops. It cost me about $400). When I stock up, I have a good 2 weeks worth of food with me. I don't have power problems with these during the summer. During the winter, I'll turn off my freezer before I go to bed. I keep it set at 0 degrees and it will usually only 'warm' up to around 15 to 18 degrees in the morning. Still plenty cold to keep frozen food frozen. So, it works out. Cooler sits in my passenger floorboard and freezer in the passenger chair. It also ends up saving me money on food expenses and gives me more flexibility on where I stop since I don't have to consider where I'm gonna get food.
I have a coffee pot, a microwave and a toaster. The 1800 watt inverter works just fine. Obviously, I only run 1 of those at a time.
