    Yes there are many drivers working an additional job(s) and they do not log it. And it probably will never be a problem. But get into a serious accident and one of the scumbag truck lawyers like the Tx Hammer get the case and you could get sued big time. Not to mention getting the FMCSA involved about the HOS violations.
    Personally, I would make sure the trucking company was aware of the other job just to CYA.

    Doesn’t even have to be a good lawyer

    anyone who can access your credit or social security records , you will be demanded by the court to suplly them , and they will instantly be able to see the other employers and then demand time cards and other documents from them .

    The only way I’d not log the hours was if I was being paid cash for the other non driving job

    I drive 1 day per week at the most, but need a record of hours of everything else I do at work.
