Easy slow cooker hacks for truckers

Starting this thread for very easy (tastes like home cooked meals) you can put together in 5 min or less and eat at the end of your drive. You can buy the inserts for your crock pot and paper dishes so you have no clean up.

 

First meal: meatballs and gravy over mashed potatoes
Frozen meatballs
1 pack dry beef gravy mix
1 pack au jue mix
1 pre made mashed potatoes for microwave
Put liner in crockpot mix grave and Auju and water then throw in meatballs set crockpot on low. Mix during your break and when you stop microwave your mashed potatoes. Enjoy

 

Pot roast:

chuck roast
Small potatoes
Small carrots
Dry beef gravy mix and auju
Dry onion and garlic minced

thow in a liner for your crockpot. Toss al ingredients in. Set crockpot and stir during your break. Serve over microwave rice or mashed potatoes. Enjoy

 

Glad you like it. Good luck in training and be sure to drive safely. I gathered a bunch of ideas before coming on the truck with my husband and the best ways to cook without a full kitchen. Hopefully I can help out by sharing some of what I have learned.

 

Rice and beans with smokies:
1 can red black or kidney beans
1 can refried beans
1 pack of little smokies (I like all beef)
Instant rice
Mince onions, minced garlic, red and black pepper ( to taste)
place liner in crockpot add all ingredients except rice and add water till it’s a little runny. Cook till done driving. Add your instant rice once your rice is done which should only be about 5-10 min and enjoy. You could also use microwave rice and pour over your bean mixture just add a little less rice.

 

Pork or beef ribs
Ribs cut to single bone
BBQ sauce
Minced onion and garlic
Water

line your crockpot. Add bbq sauce deluted with water then add seasonings stir add ribs cook till done driving being sure to stir whenever you take break.

 

Lazy chicken

boneless chicken
Cream of chicken or mushroom soup
Water
Instant microwave rice

line crockpot add all ingredients except rice cook till done driving Be sure to stir whenever you break. Heat rice Add chicken and gravy and enjoy
