I think the most dangerous stretch of 70 is Glenwood Canyon, because of the drivers who will speed through when both lanes are open. I've seen mirrors hit more than once by a driver wanting to do over the posted speed and ignoring the no passing signs. The mountains themselves are no worse than any other pass, as long as your equipment is maintained and you use common sense (granted it isn't that common anymore).

15-70 probably best. Depending on time of day and day of week, Vail to Denver can be lots of traffic, same between LA and Vegas. Also, plan at least 5-6hrs to go from grand junction to Denver. Not a lot of places to stop between there.

Best I can recall, the overall duration of the descent is pretty lengthy to get down to Denver.
For some reason, lengthy descents tend to wear on my nerves. Be prepared for that. -
Just make sure you pass through Omaha a least twice on the way!

If you have experience with I-68 then you are good to go. That road is tedious, and I'd rather drive on 70.
