A lot of it depends on where you want to live or what you want to haul.

There are lots of companies doing oulfield work out of Hobbs / Lovington, fuel out of Artesia, and milk out of Clovis / Portales.

New Mexico is a tough state for truckers.
You have a nice chunk of the permian basin so there is oilfield work
You also have some pretty good dairy stuff going on down south
There is a bit more oilfield work around Farmington
Navajo used to hire New Mexicans fresh out of school but they just ended their training program
Times are tough to drivers here and the list of companies that hire from here is much shorter .
Very little freight originates here, this is a black hole at least as bad a florida for loads .

Tanker is the best part of trucking. The customer treat you better than dry van or reefer and there is not as much waiting as reefer. ANY safe driver can safely drive a tanker, even smooth-bore as used in food-grade. The surge feels like getting hit by a train at very low speeds, when it's not dangerous, and feels like a strong wind trying to blow you over at higher speeds when it is VERY dangerous. If you drive like you have a cop in the passenger seat, and NEVER drive faster than the advisory speed on ramps and curves you can start driving in the easy part of the industry. Pay is often better in tanker than dry van OTR. Safety is taken more seriously in tanker. 1-2 years of tanker and you could get a home-daily fuel delivery job. Everything I've ever heard about Western Dairy Transport is positive.

Funny thing you mentioned I had spoke to Western Dairy today. Unfortunately I have to save up to get to New Mexico and move down there.

Since you dont seem too attached to a specific town or even quadrant of the state ... why exactly are you drawn to New Mexico?
If you are not an outdoorsman , there is not much to do here

I love the mountains down there and the weather. Did a few training exercises down there when I was in the military. I like the desert feel too which I also miss when I was stationed at Fort Bliss in El Paso, Texas. Plus the gorgeous women. Can’t beat that. Lol New Mexico can’t be any worse than Pennsylvania.

If you want to live down around Las Cruces, try Mesilla valley transport
Honestly though, the nice thing about trucking is not having a house for the first few years
I suggest signing on with a carrier where you are then tell them you want to stay out west more
Eventually you can buy a place in NM and take hometime there or get a local job
