    Nothing to report on. No progress…unless going backwards counts.

    I was at 258 a week ago. Did good eating nothing but precooked stuff I brought with me. But now I stopped to visit my dear old aunt for a couple of days, and she’s a baking legend.

    Soooo, yeah. Last weeks progress is muddled by today’s (and most certainly tomorrow’s) food binge.

    Ugh….too many holiday excuses. I’m trying to do the right the last couple days. Even went walking today. So maybe I’ll start the new year strong.

    I'm 6'2" and was 272 at my heaviest. I had a terrible habit of eating just before I went to sleep.

    I stopped eating anything three hours before I lay down for the night, and the weight started falling off without any real effort. Strangely enough, I don't wake up hungry anymore either.

    After five months I'm down to 240 pounds, and still headed in the right direction, but for my frame I should really be about 225.

    Not to mention how much better my knees feel. It was almost an epiphany after my first 20 pounds lost. I didn't realize how bad I hurt until I started to get rid of the weight.

    Just a little check-in/update.

    So I weighed myself in the morning on Dec. 31. Weighed 260. Zero progress. Haven’t really been doing anything. On Jan. 1st I had a piece of cake.

    That was the last bit of refined sugar, bread or any of that stuff I’ve had up to this point.

    I’m not gonna weigh myself until beginning of February. I think I’ve been weighing myself too often anyway, and the numbers just get me down and suck my motivation.

    So, I’ll check in at the end of the month.

    Yeah, my cravings before bed have always been my biggest hurdle. I cannot ignore my late night urges no matter how hard I try. A spoonful of almond butter or a handful of nuts is what I hit up now.

    So I did a quick-easy salsa write up the other day.

    Easy Taco Stand Salsa

    Good to throw on stuff in a pinch.

    Salsas are easy. This is what I make and just throw it on my eggs in the morning.

    Just cut up pico de gallo ingredients. I cook the onions and jalapeños up in a couple or 3 tablespoons of oil first, then add tomatoes. Add a bunch of salt and squeeze a lime or 2. You can get silly with spices, but I don’t.

    Then I added 3 big cloves of garlic (I like garlic, but 2 big cloves woulda been plenty…or none if you don’t like garlic.) I spread every thing out and let the garlic sit on the pan for about a minute til you really start smelling it. Stir it all around for a few minutes. Then throw it all in the blender.

    Then cook it down at a simmer for another 5 minutes or so.

    Let it cool. Then jar it up. As you can see, I was well into the first jar when I remembered to take a pic.

    I put this on eggs every morning. It’s great with chips of course. It’s just a good restaurant style salsa.

    There’s a million ways to do salsa, and everybody has their add-this-or-that way of doing it. But I just figured I’d post up some pics for somebody that’s never done it. It’s so easy and so good and livens up so much food.

    It’s hard to screw up, really. Make ya some!

    And it’s all vegetables, eat all you want! HeII, make a soup out of it.
