If you can't find a suitable LTL job there are a few things you can do to keep the weight off. I carry two 25' dumb bells in my basement. Every time I stop I do something with them. Also the step of the truck can be used for tricep dips and inclined push-ups. Just get creative with it. You have a gym on wheels if you look at it differently.
Also any trainer will tell you that what you eat is more important than what you do. Soda is full of horrible s### that you should never put in your body. Find an alternative, I do water with a lime cut up in it. And vegetables are your friend. There is a grocery store somewhere along your route I'm sure so grab things you can munch on like sugar peas or carrots or radishes. It sucks for about a week, then you will not even miss the old food.

I carry two of those bowflex 90 lb dumbbells in the truck. They take up WAY too much space but heck having to step over them all the time reminds me to use them once in a while.
