The times I've been to the Petro in North Little Rock, it was tolerable. I've seen others that are like it I won't go back to.
I like Taco Casa's and Stripes truck stops in Texas. Stripes has a menu that vaguely reminds me of Chipotle. Taco Casa is like Taco Bell but with real meat and cheese. Probably just as unhealthy though.
I've seen a couple of Steak & Shakes in truck stops.
Some BBQ places out there across the country...
Yeah, healthy food can be hard to come by. Half the battle is not gorging yourself on it.
Good tasting food is easy if you know where to look and what to avoid. National chains are the worst.

it's dependent on my carb intake for the day, if I'm low on carbs then it's sunnyside up and wheat toast, if not, then it's scrambled, but I want them scrambled and still egg-like, not scrambled and rubbery

Nowhere is this so true as in America "You pay you get" so if you are looking to eat really good food you gotta take toll roads, like PENNA, OH Turnpike, NJ turnpike. Panera Bread has really good food, soups and subs and their bread is awesome but pricey too, 1 bread $7.
Guys eat lot of soups and liquids and tell Subway server to put lot of olives in your sandwich, this is only way to stay healthy in this business trust me -
Turnpike food isn't better, it's just more expensive because they have no competition.
McDonald's #1 combo (big mac, fries & soda):
Off highway, about $6-7
Truck stop, $7-8
Turnpike rest area, $8-9
Yeah I noticed the new rest areas in PA have added Panera's & Starbucks (remember when we used to joke "who pays $5 for a cup of coffee?") and you can get a Steak n Shake as far east as Harrisburg (tempting,,,) but you could still pay less of the highway. -

Coming threw I81 on pa/ny border exit 230 is a nice Italian place, Tedeshi's not bad on prices either. Being used to real pizza in jersey/nyc they have a good selection of pizza. Park right across the st there's 2 gas stations to park at or park up at McD and walk few hundred yards. Veal parm is like 16$ or so and its more than enough for 1 meal

Country Pride buffet is alright if you go at dinner hour when everything is pretty fresh. If it's late you want to order something off the menu. Cant do that all the time though...too expensive paying $20 every night for dinner. Makes my Jewish side angry.
