Think I'm going to hang here instead of leaving. Drink my coffee and watch the skies.
Here's a pic of "my" coffee set up. I can't drink that stuff from the truck stops.

You should look into Bullet Proof Coffee - just google it, I bet you would like it, and it's great for you!
truck_n_vacation Thanks this. -
Thanks for sharing. Keep the tips and details coming. Very inspiring and I'm rooting for ya!
At this point, I'm inclined to think we were not meant to consume grains. We need an intermediary animal to process them. Sure, we can survive on them but living off of them leads to constant immune depression and sickness.
As far as dairy goes...I try to keep lactose low. Mainly to keep blood sugar moderate but also for allergy/intolerance reasons as well, I suppose. I tolerate butter well and use lots of grass fed. Yeah it's saturated but when you keep blood sugar in check and carbs low, the more the better. Aged cheese, cottage cheese and low sugar full-fat yogurt are typically safe and low in lactose. I want nothing to do with milk.
Apparently, it's not so much the fat and cholesterol that's bad for the heart and arteries. It's the high blood sugar that damages our vessels to begin with. Cholesterol simply attempts to heal the damage the sugar causes and quickly gets out of control.
Search for ketogenic diet. It's essentially a revved up paleo. Fats are king and saturated fats are not to be avoided as long as carbs are kept lower (around 150 grams daily, lower if you can). Fats should be 75-80% of daily intake. This way of eating really primes our cells mitochondria to shift from burning sugar to using fat instead. Resulting in stable mood, stable blood sugar, alert, reduced cravings, fat loss (and the detoxification of our system that goes with), reduced cancer risk, etc. Tons of benefits and I wouldn't be recommending it so much if I hadn't tried it myself. Definite game changer.
truck_n_vacation and Cjayn Thank this. -
Awesome post.
I don't eat butter. Unless it's grass fed butter. Kerrygold is good, but I don't keep any in the truck. I use coconut oil for my eggs.
Glad I went for my bike ride this morning in Eden. I only got a little over 18 miles. I forgot my head cover and when I turned back into the wind it was brutal.
I'm here in Washington and it's raining and wind is blowing 40+mph. The trucks rocking and I don't even have a girlfriend.
But this lead to a dilemma. I can't cook my steak. So I searched the fridge, cabinet, and drawer. So i have a can of tuna fish, mustard, pickles, salt and pepper. That's dinner. And a caveman candy bar. Photo below.
They are delicious. Well its not a snickers, but 10 times healthier.
I have than awesome feeling after my ride this morning. I'm sore, muscles ache, feel lighter, back hurts, sore butt. AWESOME!
I have to hit up a grocery store tomorrow. Need lettuce, kale and spinach. And tomato. -
This morning I am so glad I was close to a restaurant. I had a serious craving for a waffle w/butter. So I made some turkey bacon and eggs and a cup of coffee. So glad I don't have anything in the truck that's sugary. Thinking of turkey bacon. ..... I'm not impressed with butterball turkey bacon. It has that nasty jelly coating on it. I have to wipe it off before cooking it. Need to try another brand I guess. Not ready to go back to peek bacon yet. Twice the calories and fat. I don't watch fat, but I do calories. I was using natural choice precooked bacon at wally world, but wanted to cut more out. But it's really good.
I've considered keeping stevia sweetener in the truck, but I gave it away when I done my truck grocery cleansing.
Going to pull down some 93% ground beef or if the freezer for dinner tonight or for tomorrow. Need to cook the steak first I guess. And the cabbage and tomato b4 it goes bad. No since in wasting it. -
Now you see it! (Steak & cabbage)
Now you don't!!! Mmmmm, Mmmm!
I so needed that. I haven't had a good hot meal in a couple days. I did eat salmon with broccoli, and STEAMED squash and zucchini at Dennys. (No bread) was not bad at all. Even though my cravings were saying nachos!
It was a busy day cutting into lunch. So I had a banana and 1 apple in the front seat and a maple nut bar. So dinner was great. Back to egg whites, salsa, and more turkey bacon.
Depending how cold it is in the morning might exercise in the rest area. Oh and today's calorie count was 1192. It's been between 1100 and 1600. Depending on the meal.Attached Files:

Went for a run last night. my Left leg started to hurt at mile two. I felt it when it happened. Stopped and stretched it and headed back to the truck. I jogged by a head lamp I use for hiking also. And all the dogs were behind fences. But some still gave me a startle for sure. Lol
I was at Town Pump in Columbia, mt and it was dark, so I just ran toward town. And they have spinach salads with no cheese. Yeah!
Going to stop at my fuel stop and hope they have a scale. It really doesn't seem I lost very much this time. And that brings up something else.
Two years ago when I lost a lot of weight I never saw myself as skinner. Even though lots of people said I looked great and in shape. But whenever I looked in the mirror I still saw that same big fat guy. And always seem to. I know I lost lots of weight because of the new clothes, energy levels way up, and the up side of more of the ladies wanted to hang out! But even still, I saw the fat guy in me. I did have lots more confidence. I was told that many times, but the mental part of looking in the mirror and still seeing the fat guy is hard to change. Like someone who is obsessed with bodybuilding. (Got a friend like this) He can never be big enough. He's huge to the point it doesn't look cool, but he tells me he still sees himself as that small kid in high school. I could go on about him, but I tell him it's the same way I feel about being fat.
Guess I've been fat too long. I actually was always below 170 lbs until I got back from iraq. When I got back to Germany it just packed on.
I think eating healthy and exercise is the key. I am not craving sugar anymore at all. The hard part every once in a while is bread. I was in the bread business for 15 years. A couple years ago I took some chef classes. Mainly italian cuisine and pastry. Thinking of pastry. ..lol I would like a cream cheese kolache. Or Pate a'Choux with vanilla bean fillng. I got to stop drooling. Lol
Vegetable tip.
Mushrooms. Keep in original container. If only using some peel back edge and recover. If buying loose, put in bowl cover with saran wrap and poke a couple holes. NO lid. Once slim develops chunk out! I get mine to last about a week. And cremini is just a baby portabello. -
No cure for it. Just too many on one router. I usually hit up Panera Bread or starbucks when I find them. I thought the same with att, but don't want to spend the $125+ to get the extra data. I squeeze by with just 5 gigs.
Weigh-in probably Monday. Taking 34 at yard then heading to NC.Peelsession Thanks this. -
Grocery haul day. Wal mart and natural grocery.
So tomorrow in kinda busy. Got to go to town to get a socket that fits the seat belt bracket to pull the seat, wash clothes, paperwork, maybe cook my spaghetti squash, and if weather is nice a bike ride. But right now put away groceries relax and watch some tv. -
Spaghetti squash. Mmmmmm is so good.
