First, might consider checking gauge accuracy. If you can use Insite to monitor while loaded and make sure your dash gauge follows closely to what the ECM is seeing. 10-15 degrees above coolant temp is quite normal during a loaded situation. 45 degrees difference is quite a ways off and I agree should be looked into. Did you replace the oil thermostat with the new oil cooler elements? That would be my first place to go next.
