Since I'm in the desert and my a/c is broken atm I have a question.

I'm driving a 2009 Kenworth T600 with a C-15. Everytime I go to a hot place like the desert or Texas and the temperature gets above 101 degrees my A/C occasionally powers off and stays off until the sun goes down and the ambient truck engine temperature cools. The gauge never shows above 220 and usually stays in the 190 range.

Would this be a thermostat issue?

do you ever see frost on the a/c lines going into the evap//heater core box? (from under the hood?)

if so, you could also have a plugged orifice tube, or expansion valve.

    How is it the thermostat?

It sounds like the high side is really hot and the ecm is shutting it down to prevent a problem.

If your gauges are correct could be bad high side pressure switch. What is your low pressure?

Also check your air flow across the evaporator coil, make sure filter is clean. Make sure both coils are clean.

Thermostat regulates engine coolant temperature. It has zero effect on the A/C system.

I believe we are talking about the A/C thermostat, that keeps the evaporator coil from freezing. And yes it could be the thermostat. Bad thermostat or clogged dirty coil will cause this.
