    Today I tried a new variation of a dish I enjoy, Malai Kofta. I mostly made it in the Instant Pot, but I did use the air fryer to bake a plantain for the dumplings. Traditionally it uses potatoes, but I prefer using sweet potatoes. The problem with sweet potatoes is that they have more moisture, so the consistency of the dumplings is hard to get right without adding starches or flours. Using a plantain got the best of both worlds, although next time I will get a slightly more ripe one so it is a bit sweeter.

    I made basmati rice and put it aside.

    I cut the plantain into 1/2" rounds and air fried for like 10-15 minutes. I used my Magic Bullet to mix it with the following ingredients.
    1 tsp coriander
    1/2 tsp garam masala
    1/2 tsp cumin
    1 tsp chili powder
    1/2 tsp turmeric
    2 small boxes of raisins
    I also added a little bit of quinoa flour, maybe 2 tbsp, but I don't think that was necessary
    Form them into dumplings and air fried for 10 minutes.

    For the sauce I start with a bit of olive oil on saute mode
    I've got a no salt seasoning from Costco that I mixed in. It's mainly for the onion flavor.
    14 oz can of tomatoes, I prefer them to be pureed or crushed
    2 tbsp of cashew butter
    1 tbsp of ginger paste and garlic paste (sold in tubes in produce section at Wal-Mart)
    1 tsp cumin
    1/2 tsp chili powder
    1 tsp coriander
    1/2 tsp turmeric
    1/2 tsp garam masala
    14 oz can of light unsweetened coconut milk
    2-3 tbsp brown sugar

    I let it cook for a few minutes while stirring when it starts to boil. Then I add the dumplings and let them soak for a few minutes. Serve over rice.

    I make beef/chicken and broccoli a couple times a week.
    I use an Asian marinade when I do as they don’t need to be refrigerated

    Split pea and Spam soup is better than it sounds. Dry split peas/lentils don't need to soak like beans.

    split peas and or lentils, garlic, sriracha, and a couple slices of Spam cubed. simmer for a few hours. they say 20 min but, I doubt it. Throw it in on your 30 min break...

    $2 meal?
