Whats good to keep inside the truck

    Pre cooked frozen grilled chicken slices or cubes. Bagged salad. Salad dressing. Tomatoes. Hard boiled eggs. Stuffed olives. shredded cheese.

    In 5 minutes you got a healthy fill ya up lunch.

    It’s true though, I won’t keep it for more than a month but I haven’t been sick yet. I learned this from a lady I worked for years ago that lived in Costa Rica for a while and she lived in a remote area with no refrigerator. I was very skeptical since I had food poisoning once.
    That why I use the squeeze bottle so no utensils go in the jar. Now once it’s put into or on something that’s when it gets dangerous.
    I won’t eat any thing from a deli or picnic that is premade with mayo.

    Science disagrees with you. Mayo is fine until it is opened. As soon as oxygen hits it bacteria starts to grow and it needs to be refrigerated to keep from spoiling. I'm fact it still spoils, just at a much slower rate.

    You are probably confusing real mayonnaise with a mayo substitute similar to miracle whip.

    Okay.........

    I don’t know how anyone can confuse real mayonnaise for miracle whip.

    I use Hellman’s and I haven’t died yet.

    Just make sure to have a plastic container to store any leftovers of this in, the can will be eaten by the juice if you leave it in it and contaminate it. They also have the plastic cups of diced fruit and apple sauce.

    Yogurt
    cottage cheese
    cherry tomatoes, low in calories and good for heart health also
    grapes
    Potato or macaroni salads
    Milk
    Lunchmeat / Cheese

    If you have an inverter, a Kuerig coffee pot and pods, or other similar coffee makers, flavored creamer as needed

    Canned chicken breast can be used for chicken salad (add fresh grapes to it or apple even)

    Pickled beets would last longer in a cooler before needing to be finished off

    If you have a microwave:

    Potatoes for a baked potato with cheese and toppings. Even a plain baked potato can be eaten on the go like a boiled egg

    Chef Boyardee Ravioli's

    Precooked Bacon slices for sandwiches or to eat with scrambled egg/omelet

    Canned vegetables

    Sam's Club has the 7 grain rice or quinoa and rice which only take about 90 secs to heat up and are good mixed under things like lima beans, noodles, meats, canned chili, etc. Stores have smaller packages like Uncle Ben's too, but I prefer the Sam's Club variety better at home.

    Rayburn's Philly Steak sandwich from Sam's Club

    Protein veggie bowls by Green Giant even if only 1 in the cooler for something quick and different.

    Husband has an Igloo strapped in passenger seat and the built in refrigerator with a small freezer.

    So much can be fixed in the truck if you have the time.
