Here is a very simple but great slow cooker recipe. It can be cooking while driving and you will have a hearty meal ready when shutting down for the night.
Hodge Podge Crockpot Chicken
3 lbs of chicken - your favorite pieces
1 pkg frozen pearl onions
1 pkg frozen peas
1 pkg frozen carrots
1 pkg frozen green beans
1 large (15 oz) can of cream style corn
1 (11 oz) can cream of chicken soup
1 tsp of garlic powder
Salt & pepper to taste
Place chicken pieces in crockpot, add all the veggies.
Pour the cream style corn and soup on top of those.
Add garlic powder
Cover and cook for 7 hours on low.
Add salt & pepper to taste just before serving.
Any frozen veggie will work well with this, use what you prefer.

I do a lot if alow cooked recipes on the road. Love the way my truck smells after a few hrs in the cooker. I do stuffed chicken with some potatoes and carrots thrown in, a few spices and some brocoli and cheese soup.
I make all of it in the weekends and it's ready to throw in. I I laugh at the guys who comment " I have to eat at truck stops I am not gonna live off peanut butter and jellys and junk food all the time.
I eat real good, delicious, hot meals nearly every nightMeowercizer Thanks this. -

The nice thing about slow cookers is what can be done with any veggie combination, some broth, seasonings of your choosing, and any meat. Toss 'em all in, turn the bugger on, and wait a few hours to eat the delicious, nutritious results.
