It used to be a place like a pub or bar with food, not big, nor noisy but cozy with home style food. The idiots took it and twisted all up to mean special and unique with food that is really marginal and expensive.
Just say bar food and you have a bistro.
By the way, many cling to French things think it is a French word but it is Russian from the invasion of Paris by the Russians, they introduced the word. -
