I have to ask experienced drivers whats the general thought on pulling into a truck stop and seeing trucks parked in non parking areas along the curb out of the way because the lot is full.

When you're out of hours? What choice do you have? I try not to do that, and plan accordingly but every blue moon that back fires. It's only shameful when truckers do that, but there's lots of parking available

Gotta do what you gotta do, as long as you’re not blocking any services or anyone else in.
I’m not a fan of people parking right next to the scale, especially idling next to it. Had to scale a load the other night and basically yell over his truck to give my info to the scalemasterOldironfan and Diesel Dave Thank this. -

That's been going on since the advent of cab-overs ! Or something like that. I can see it if you are not blocking traffic lanes with-in the truck stop. The Pilot in Avondale Az. come to mind. Park along the curb with still plenty room to get past. It's the fools that park willy-nilly just anywhere that bugs me and mgmt. that doesn't enforce the rules.
