I have a bit of a different situation and looking to see if anyone knows how it works.
I previously worked for a company (small mom and pop) that does local work with their fleet of trucks. I’ve since moved on but stay in touch. I bought a truck off them in the past.
Recently I have got some contacts and some work setup for a dump trailer for the local quarry. Long story short I need a truck. I know the company has some sitting. Is there a way I could rent it from them where they keep ownership/ plates but I have my name/dot number on the door and the truck on my insurance? I assume it’s not the same as renting a truck from say Ryder as they are a rental company. Thoughts?

Welcome, oh, I'd be careful with that. Insurance is going to be the biggest obstacle. Is it just stock piling in the pit, or is it on the road stuff, because liability is ironically a killer these days. With so many older trucks out there, for a song, the least amount of people you involve, the better. I'd just get my own cheapie tractor, especially if you aren't going far.

What you're describing is basically a lease arrangement. Talk to your insurance agent first, they'll tell you exactly how they want it written up because the rental vs lease language changes what's covered. Some carriers have templates for short term equipment lease between companies. IFTA and fuel tax falls on whoever has the DOT active so make sure that side is covered too.
