I'm needing to temporarily replace the serpentine belt that attaches to the alternator, however, I'm needing to bypass the ad compressor (because the bolts have broken into the block).
I know to measure the distance around the pulleys that the shorter belt will attach to, however, should I measure all of the other pulleys or just the alternator and one other pulley. Sorry, new to this...
I have an 06 freightliner columbia with a Mercedes engine.

You could run a piece of string around all the pulleys you want to run with the shorter belt and then take the string off and measure the loop that the string makes.
This should get you close to a size.

Call freightliner dealer with vin number and they should have belt number for you without going around the a/c compressor. I know they did for a 95 fld120
