Temp controlled fan switch help

I have a 1999 peterbilt 379 with the N14 select plus. I want to put in a temperature controlled fan switch for 195 degrees. But I also want to keep my 205 degree switch in as a just in case. Can someone tell me what I need to do or send a wiring diagram for it please. Thank you.

It might be easier to put a toggle switch to turn the fan on manually.

I guess you could buy a 195* fan stat and wire it to ground the fan relay. If they even make a 195* fan stat.
