So honest question here, how does one keep the smell out of the sleeper. I just imagine all the fabrics, your clothes just overcome with the smell of cooking?
What type of foods do you cook in your air fryer on your semi-truck?

Like Pork Chops?
Breaded Air Fryer Bone-in Pork Chops | Everyday Family Cooking
Prep time 5 minutes. 8 minute cook time. Breaded Pork Chops. Even leaves you a few minutes to eat'm!
I said I wouldn't type a recipe but I didn't say I wouldn't post links to any.
Whoever said you couldn't make a meal in 30 minutes, your welcome. Toss some veggies in before/after the chops, or have a salad ready to go, and you got a meal.
For a longer cook time..def not a quick lunch meal but...
Easy Marinated Pork Tenderloin in the Air Fryer | Everyday Family Cooking
5 minute prep, 22 min cook time.
I suggest the Smithfield pork tenderloins. Applewood Smoked one, is quite tasty. Just did one on the grill the other night.
One can also do pork belly...which is awesome if done right.
Sirloin steak 10 min cook time, 10 min rest time. Says 30 minutes prep time, but I'm not counting that, as it's only to get the steak to room temp. I'd take it out 30 mins before stopping. Cook. Rest. Eat. Or prep the day/night before.
Air Fryer Sirloin Steak | Everyday Family Cooking
Skirt steak...you know...for TACOS...or fajitas, carne asada, etc. - This takes time, due to marinating the meat. Could do it before start of the day, and it's ready to be cooked at break time. 10 min cook time in a airfryer.

Burgers - 5 min prep. 8 minutes to cook.

Some ideas for ya, plus give you an idea of the things you can do with that Airfryer.
All I got for now, till I get bored again and go looking for recipes.
Far as microwaves go....it'd go right out my window. I don't even own one at home.

Remember: You're going to have to clean the air fryer. They can get greasy depending on what you're cooking in them.

As said in the post above me, you will need to clean it. Dish soap and hot water will handle a lot of it.
I suggest Dawn Platinum. A little goes a long way, and it cuts through grease. Regular dawn will work to.
I use it all the time for cleaning dishes, pans, etc.

Semantics. Cooking in a truck isn't easy and isn't always cooking. What i've seen a lot of people espousing is the warming of precooked and ultra processed foods. Microwaves, Pizza Ovens and Air Fryers etc.... Yawn... There's some #### fine ultra processed foods if you want to kill yourself with a steady diet of it. I enjoy Tyson's various Chicken products as much as the next guy. Specifically Buffalo Chicken bites and ranch dressing :O)
With that said Ninja Air Fryers are King! Everything those Ninja's make is top notch!

If you want to be a processed food ninja, go that route but it isn't cooking. As far as potentially wrecking a DC system with an AC appliance through an inverter? Hogwash! Worst case is you'll trip the breaker or blow the fuse. Plan accordingly.
Crockpots. Love mine and they certainly have their place cooking. Think soups, stews and casseroles. Not good for much else. Actually come to think of it don't even use the crockpot as much now i have realized that deglazing a cast dutch oven and continue cooking in it whups the crock pot hands down.
What i would suggest to anyone trucking is the Sous Vide style of cooking. A little bit of investment:

K.I.S.S. (keep it simple stupid) Cook at home how you like/prefer. Separate accordingly. Vacuum and rewarm in vacuum bag. Done. Nothing beats the efficiency of your home kitchen and rewarming on the road.
