I was a professional poker player on and off the last few years and this is the only thing holding me back on my application., as this isn't really verifiable. So far I have applied to:
    TMC
    Maverick
    Wil-Trans
    Prime
    Millis Transfer
    Schneider
Most of them are "looking into it" but it doesn't sound good. I am not interested in paying for the school myself because the employment issue will hold me back after I graduate anyway. Can anyone recommend a school that is more lenient on this requirement? I have read stories on here of people that were unemployed getting hired, but I'm not quite sure how they manage to pull that off when every recruiter tells me it's a requirement to have verifiable work history.

Try Carolina Logistics. It's a Russian outfit in North Carolina.
CRST - can make a decent living there if you sign up for a dedicated account.

Update: I obtained a time sheet from Planet Hollywood Las Vegas of my poker play and I sent it into Millis just as a sample of what it looks like. This one casino only accounted for 250 hours of work since 2015 and very surprisingly, they accepted this and now I'm good to go!

Generally, they just want to know you arent fibbing about your "stint in prison". Just be honest. Tell them what you were doing, and why. Being self employed is pretty common. Did you win a few tournaments? Offer some documentation of your winning. I don't know what the form is, but the IRS has one, I'm sure. I know the company I am with takes things on a case by case basis. As long as they feel you are being honest about your work history, or lack thereof, and you are an acceptable applicant otherwise, you'd be ok, most likely.

Homeland Security requires information on prospective applicants to account for time spent employed and in any gap between employment. Your poker time card seems to be adequate. All employers have to check this when involved in sensitive work such as Trucking on everyone who applies.
