Howdy,
I’d like to buy 2 or 3 Chevy pickup trucks and have someone haul em 1000 miles from Utah to Central Texas. Would this be a flat bed capable of loading a pickup? Car hauler? or
Is it hard to find an individual/independent driver who would do this ? Where do you look? Here? I’d pay cash.

You hitch each steer axle of a tractor onto the 5th wheel of the driveaway towaway vehicle, disconnect axles to tires on ground, shafts etc of the towed tractors.
You can take three to one towing tractor's 5th wheel on each others 5th wheel.
Its not my forte' but others will chime in. -
Any flatbed would work, load with a rollback wrecker.

I’ve hauled 2 cars in my dry van, put pallets in the nose, and in between both. Set parking brakes, and a strap across the back for good luck.

Yep. bedbuggers hauls cars in their vans along with the furniture. They have straps with hooks on one end going to the etrack on the other.

Full size pickup is 20' long. You can get 2 of em on a flatbed without stacking them. If there's enough room for overhang at the front, you might get all three on there.

3 p/u trucks will fit on a 48 ft. flatbed with no problems

You need to read the OP again, no tractors involved here, just pick up trucks. -
There are probably car transport trailers small enough to transport all three for a shipping charge in one trip.
