I've had pretty good luck with venison and elk jerky and my smoked salmon isn't bad but every time I try a ham it turns into a disaster. The last ones I did the dogs wouldn't even eat .

Tried to smoke or salt the hams ? If salt never let the meat touch another piece of meat , 3inches of space in all directions covered in salt .
I've never tried salting, just smoke. I lucked out though, there's a guy in town that smokes ham, turkey, and whatever else you bring him. I pay him in venison. Old style butcher shop and the best news is he has his kids in there with him learning the trade.
I don't know. Probably if you brought him one. We don't see a lot of moose in this neck of the woods. Lots of elk and deer though.
