We can't tell you any more than what you were told from driver services. In fact, they know more about that since they have access to the mentor's statuses.
It all depends on the availability of any mentor that fits your "criteria." Mine called me on a Friday (day after orientation) to tell me he would meet with me on Monday to start. Some people may have to wait a few days or more. A week is usually tops, though.
